We’re thrilled to feature this honey processed Castillo from Popayán. In the cup, we find vibrant sweetness, layered fruit character, and a bright, structured acidity, all carried by a silky texture and clean finish. The honey process adds depth and roundness while still allowing the clarity of the origin to shine through. 

This community blend is traceable to four small family farms in Colombia’s Cauca Department, where careful cultivation and attention to detail are central to daily farm life. Ripe cherries are hand-harvested and delivered to a centralized mill for advanced sorting and controlled fermentation in sealed bioreactors. The coffee is then slowly dried in temperature-controlled solar dryers, promoting even moisture reduction and consistency in the final cup.

The result is a precise, expressive coffee that highlights both the character of Cauca and the thoughtful processing behind each lot.
