*This lot rewards a bit of patience after roasting. After a few weeks of rest, it gains clarity, sweetness, and a more defined layered structure. Brewed gently and ground a little finer than usual, it presents a subtle, structured cup that continues to evolve as it cools.
Sourced through Banexport and produced by seven smallholder farms, this coffee reflects Colombia’s long tradition of family-run cultivation and collaborative quality development. Each producer operates a micro-mill, carefully harvesting ripe cherries before overnight maceration, followed by depulping, controlled fermentation, washing, and slow drying on raised beds.
