El Diamante was the chosen coffee Avelyn competed with in January when she represented Discovery Coffee in the Western Qualifiers National Barista Competition in Calgary.
El Diamante is a honey anaerobic processed coffee, grown in the San Rafael de San Ramon region of Costa Rica by Carlos Fernandez Morera. This means that after being de-pulped, the seed (with their layer of mucilage) is placed in a tank where the temperature, oxygen levels and rate of fermentation can be controlled. This careful process enhances the fruit-acidity and spicy notes of cinnamon and cloves in this coffee.
